Production Manager, Manila

Industry: Cakes, Pastry & Bakery Manufacturing

The Production Manager leads and coordinates all aspects of pastry and cake production to ensure products are made efficiently, on time, and with consistent quality. Youll drive production planning, supervise the team, optimize processes, and enforce food safety standards so that every batch of cakes and pastries meets our delicious expectations.

Production Planning & Scheduling

• Develop detailed production plans based on demand forecasts, orders, and store needs.
• Prepare daily/weekly schedules for baking, decorating, cooling, packaging, and delivery coordination.

Team Leadership & Supervision

• Lead and mentor production staff including bakers, pastry chefs, and assistants.
• Assign tasks, monitor performance, and ensure smooth handoff between production stages.
• Train new hires on procedures, safety, and quality expectations.

Quality Control & Safety

• Ensure all products meet company quality standards and presentation guidelines.
• Enforce strict food safety, sanitation, hygiene, and Good Manufacturing Practices (GMP).
• Work with QA teams to implement HACCP and other food safety systems.

Process Optimization & Efficiency

• Monitor production workflows to reduce waste, improve yields, and maximize capacity.
• Coordinate with purchasing for timely ingredients and packaging supply replenishment.
• Identify bottlenecks and propose improvements to equipment, procedures, or staffing.

Reporting & Collaboration

• Prepare production reports, cost analysis, and waste tracking.
• Collaborate with store operations, marketing, and supply chain teams to align production goals with sales promotions and inventory needs.
• Maintain documentation for compliance and audits.

• Bachelors degree in Food Technology, Industrial Engineering, Hospitality/Food Service Management, or related field preferred.
• 3+ years of experience in bakery/cake production or food manufacturing.
• Experience with food safety standards (e.g., HACCP, GMP) is an advantage.
• Strong leadership, communication, and problem-solving skills.
• Comfortable with fast-paced production environments.
