Key Duties and Responsibilities:

I. Adherence to Food Quality

  • Ensure cooks adhere to standard recipes
  • Check finished products to ensure authentic taste
  • Prepare and assemble cooked products according to established standards of portioning, serving, sanitation, and hygiene
  • Check quality of incoming materials and accuracy of all items issued from the central commissary
  • Present ingredients/raw materials to line cooks and demonstrate proper preparation and cooking techniques
  • Double-check finished products to ensure compliance with menu standards
  • Monitor actual inventories of all food items within the kitchen area
  • Conduct weekly inventory/assessment of tools and equipment to ensure optimum efficiency
  • Maintain par-stocks of food products for all menu items
  • Monitor menu item volumes to ensure par stocks are maintained
  • Request all products in a timely manner for prompt delivery to the kitchen and customers

II. Training and Performance

  • Train line cooks for each section and conduct cross-training to familiarize them with all sections
  • Evaluate line cooks performance
  • Supervise line cooks and ensure products are prepared in accordance with standards
