The Restaurant Manager of SUMA Manila will oversee the daily operations of the restaurant located within Y2 Residence Hotel in Makati. This role requires strong leadership, operational efficiency, and a passion for delivering exceptional guest experiences. The Restaurant Manager will work closely with ownership, the culinary team, and FOH/BOH staff to ensure smooth operations, consistent quality, and alignment with SUMA Manilas brand identity of balance, warmth, and sophistication.
Key Responsibilities
- Operations Management
- Oversee day-to-day FOH and BOH operations, ensuring seamless service flow.
- Monitor food quality, presentation, and service standards to maintain brand consistency.
- Implement systems for inventory, purchasing, and cost control.
- Ensure compliance with health, safety, and sanitation standards.
Staff Leadership & Training
- Lead, train, schedule, and motivate FOH/BOH staff to achieve high performance.
- Foster a culture of professionalism, accountability, and hospitality.
- Conduct regular performance evaluations and implement incentive/punishment systems when necessary.
Financial & Administrative
- Assist in setting and monitoring sales targets, budgets, and cost management.
- Review daily sales reports and identify opportunities to increase profitability.
- Handle cash control, supplier coordination, and expense management.
Guest Experience
- Ensure guests consistently receive excellent service and hospitality.
- Handle guest feedback, complaints, and special requests with professionalism.
- Work with the team to create memorable dining experiences aligned with SUMAs identity.
- Marketing & Brand Alignment
- Support execution of restaurant promotions, events, and collaborations.
- Ensure brand image is reflected across service, uniforms, menus, and customer touchpoints.
- Assist in developing strategies to attract hotel guests and outside diners.
Job Requirements
- Education & Experience
- Bachelors degree in Hospitality Management, Business Administration, or related field (preferred but not required).
- Minimum 35 years of experience in restaurant management or hospitality leadership.
- Proven track record in managing both FOH and BOH operations.
- Experience in hotel restaurant settings or upscale dining is an advantage.
Skills & Competencies
- Strong leadership and people management skills.
- Excellent communication and interpersonal abilities.
- Proficient in restaurant systems: inventory, scheduling, and POS management.
- Financial acumen with the ability to read P&L statements and control costs.
- Strong problem-solving and conflict resolution skills.
